Spice Crusted Tofu With Avocado Salsa

Cool, creamy avocado salsa tops spice-crusted tofu

A cooling avocado salsa tops oven-fried, spice-crusted tofu in a dish inspired by the flavors of India and Southeast Asia. Jasmine rice and steamed asparagus would make great accompaniments.

Serves 2 as a main course, 4 as an appetizer.

Prep Time: 15 minutes

Cook Time: 35 minutes

Ingredients:

  • For the Tofu:
  • 1 package extra firm tofu, drained and rinsed in cool water.
  • 1 tablespoon curry powder
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 tablespoons potato or corn starch
  • .
  • For the Avocado Salsa:
  • Juice of 1 lime
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons good-quality soy sauce
  • 1 large clove garlic, finely chopped
  • 1/8 teaspoon hot sauce, or more to taste
  • 1 large avocado, peeled, pitted, and chopped
  • 1 large red bell pepper, seeded and chopped

Preparation:

Preheat the oven to 425° F. Generously oil a foil-lined baking sheet, and set aside.

Line a cutting board with a folded, clean tea towel or several layers of paper towels. Place the block of tofu on the towels, and slice crosswise into 8 equal pieces. Lay the tofu slices on the towel-lined cutting board, top with another clean tea towel or more paper towels, and gently press the towels to absorb the excess water from the tofu. Set aside.

In a shallow dish large enough to accommodate the tofu slices, whisk together the curry, coriander, chili powder, sugar and salt. Place the potato or corn starch in another shallow dish.

Dredge a piece of tofu in the spice mixture, making sure to coat all sides of the tofu with the spices. Next, lightly dredge the same piece of tofu in the potato or corn starch. Place the spice-crusted tofu on the prepared baking sheet, and repeat with the remaining tofu slices.

Place the tofu in the preheated oven. Bake for 20 minutes (the side facing the baking sheet will appear slightly crisp, while the tops may appear dry). Gently turn the tofu with a spatula (if it doesn't lift easily, with the spice crust intact, bake for a few more minutes before turning). and continue to bake for 10 to 15 minutes, or until the tofu is baked through and the spice crust is evenly crisp.

While the tofu is baking, make the salsa: In a medium bowl, whisk together the lime juice, olive oil, soy sauce, garlic, and hot sauce, Add the avocado and red pepper, and toss gently to combine.

Plate the tofu, top each piece with a spoonful of the avocado salsa, and serve any additional salsa on the side. Enjoy!
