Broccoli Raab With Garlic & Hot Peppe

Garlic and a touch of hot pepper perfectly complement broccoli raab in this simple preparation.

Prep Time: 5 minutes

Cook Time: 7 minutes

Ingredients:

  • 1 tablespoon extra-virgin olive oil
  • 2 large cloves garlic, chopped
  • 1/4 teaspoon hot red pepper flakes
  • 1 bunch broccoli raab (rapini), trimmed and rinsed

Preparation:

Warm olive oil in a large, deep-sided skillet over medium-high heat. Add the garlic and red pepper, and saute for 30 seconds.

Add the broccoli raab, water still clinging to the leaves, to the skillet. Saute for 2 to 3 minutes, until the broccoli raab begins to turn bright green.

Add 1 to 2 tablespoons of water to the skillet, and saute for 2 to 3 minutes longer, until florets are tender and uniformly bright green. Enjoy!
