Carrot Salad With Parsley

Bring a taste of spring to the table all year round with this crunchy carrot salad, accented with fresh parsley.

Serves 4.

Ingredients:

  • 1 pound carrots, peeled, trimmed and julienned (cut into matchsticks)
  • 1/4 cup chopped fresh parsley
  • 2 large cloves of garlic, coarsely chopped
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar

Preparation:

Combine carrots, parsley, garlic, olive oil, and vinegar in a bowl. Toss to coat. Chill, covered, until ready to serve. Bon Appetit!
