Ingredients:
- 1 pound carrots, peeled, trimmed and julienned (cut into matchsticks)
- 1/4 cup chopped fresh parsley
- 2 large cloves of garlic, coarsely chopped
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
Preparation:
Combine carrots, parsley, garlic, olive oil, and vinegar in a bowl. Toss to coat. Chill, covered, until ready to serve. Bon Appetit!
