With smooth, mellow avocado, bursts of juice from gem-like pomegranate seeds, fragrant cumin and the tart lift of lime, this Avocado and Pomegranate Salad With Cumin-Lime Vinaigrette is a treat for the senses. Its flavors would be a great complement to Mexican, Indian, Moroccan, or South American Cuisines. Simple to make and beautiful too, this Avocado and Pomegranate Salad is also a great choice for entertaining.
Variations: If pomegranates are not in season, try mango or tomatoes instead.
Serves 2 to 4.
Prep Time: 10 minutes
Ingredients:
- 5-ounce package baby greens, herb salad, or baby spinach, rinsed and dried
- 1 large avocado, halved, pitted, peeled, and sliced
- Arils (seeds) from 1/2 pomegranate
- Cumin-Lime Vinaigrette (see link for recipe)
Preparation:
Mound the baby greens in the center of a platter or on individual salad dishes. Arrange avocado slices over the greens, and sprinkle with pomegranate seeds.
Drizzle the salad with Cumin Lime Vinaigrette , and serve additional vinaigrette on the side.
For a more casual presentation, you can cube the avocado instead of slicing it, and toss all of the ingredients -- including the vinaigrette to taste -- in a bowl. Enjoy!
