Peach Merba

Not to be confused with Peach Melba, Peach Merba is a tart-like dessert featuring fresh peaches dressed simply in cinnamon sugar and baked in a vanilla sugar cookie crust. I have no idea where it got its name, but I do know it's one of my favorite summer desserts.
