Vanilla bean sugar

Flecked with vanilla beans, this sugar is perfect for flavoring tea or coffee

© 2008 Miri Rotkovitz

This vanilla bean-flecked sugar uses the entire vanilla pod for an intense flavor. Blending the sugar and vanilla bean in the food processor yields a superfine texture that's great for stirring into tea or coffee. Package the sugar in a crystal sugar bowl for a special gift.

Makes 1 cup.

Prep Time: 2 minutes
Ingredients:
  • 1 cup sugar
  • 1 vanilla bean, cut into 1-inch pieces
Preparation:

Place the sugar and vanilla bean pieces into a food processor (you can also use an immersion blender with a food processor attachment). Pulse the processor on and off several times, until there are no longer visible pieces of vanilla pod, and sugar is finely textured, with vanilla beans throughout.

Place the sugar in an airtight container and store in a dry place. The sugar will keep for several months. Enjoy!
