Winter Spice Sugar Plum Bonbons

Crunchy almonds top these sweet little spiced sugar plums

© 2008 Miri Rotkovitz

These beautiful little Winter Spice Sugar Plum Bonbons are naturally sweet, and feature a winning combination of plump prunes and spiced almond paste, topped with crunchy almonds. They keep well, so they make great gifts. Plus, since there's no cooking or cutting involved, this is a great recipe for kids -- it'll keep them occupied, and they'll love getting permission to play with food!

Makes 45 bonbons.

Tip: Be sure to use almond paste, and NOT marzipan, which is too stiff and sweet for this recipe.

Prep Time: 20 minutes

Ingredients:

  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cardamom
  • 1 7-ounce tube almond paste
  • 45 pitted prunes (dried plums)
  • 45 raw almonds

Preparation:

In a medium bowl, mix together the spices. Add the almond paste and press into the spices.

With clean, dry hands, work the spices into the almond paste, kneading until the spice is evenly distributed throughout the paste.

Break off hazelnut-sized pieces of the spiced almond paste and roll between your hands to form smooth balls. Press an almond paste ball into the cavity of each prune.

Top each stuffed prune with an almond, and press the almond gently into the almond paste.

Store the Sugar Plum Bonbons in an airtight container in a cool place. Enjoy!
