Herbs and spices transform a simple log of goat cheese into party-worthy fare.

Serves 4.

Prep Time: 5 minutes

Ingredients:

  • 1 6-ounce log soft goat cheese
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • Pinch of dried tarragon
  • 1/4 teaspoon paprika
  • Pinch of cayenne
  • Pinch of chili powder
  • 1 teaspoon coarsely ground black pepper

Preparation:

Slice the goat cheese log crosswise into 3 even pieces.

On a small plate, combine the basil, thyme, and tarragon. Roll a "wheel" of goat cheese in the herbs, pressing gently so they adhere to the cheese. Place on a serving platter.

Wipe any remaining herbs off the plate, then combine the paprika, cayenne, and chili powder on the clean plate. Roll another piece of goat cheese in the spices, and transfer to the serving platter.

Clean the plate, add the black pepper, and roll the last piece of goat cheese in the pepper. Transfer the pepper-crusted cheese to the serving platter.

Serve the herbed goat cheese with nuts, dried fruit, and crackers or baguette. Enjoy!
