Easy Blueberry Ginger Waffles

Blueberry Ginger Waffles

Doctor waffle mix with blueberries and crystallized ginger, and take breakfast from ho hum to YUM!

Makes 8 Belgian-style waffles. Smaller waffle irons may produce a higher yield.

Prep Time: 8 minutes
Cook Time: 10 minutes
Ingredients:
  • 2 cups pancake and waffle mix
  • 2 tablespoons finely chopped crystallized ginger
  • 1 1/3 cup milk or soy milk
  • 1 egg
  • 2 tablespoons oil
  • 1/2 cup fresh or frozen blueberries, rinsed
Preparation:

Place the waffle mix in a large bowl. Add the chopped crystallized ginger and toss with a spoon or clean dry hands, so the ginger pieces are well incorporated into the dry mix.

Add the milk, egg and oil to the waffle mix, and whisk just until smooth. Fold in the blueberries.

Heat an electric waffle maker (or an old-fashioned stovetop waffle iron) according to manufacturer's directions. Add the batter and cook the waffles as directed. Enjoy with pure maple syrup, fruit, or other favorite waffle toppings.

Leftover waffles may be frozen, well wrapped in foil, for up to two months.
