Humble canned sardines get a makeover with lemon, fresh chives, cracked black pepper, and hot sauce. Fresh grilled or roasted sardines can be treated to the same preparation.

Serves 1 to 2. Recipe is easily multiplied.

Prep Time: 10 minutes

Ingredients:

  • 1 can skinless, boneless sardines, preferably packed in olive oil
  • Extra-virgin olive oil
  • 1/2 lemon
  • Freshly ground coarse black pepper
  • 2 to 3 fresh chives, finely chopped
  • Hot sauce

Preparation:

Place the sardines on a serving plate and drizzle with a little olive oil. Squeeze the lemon over the sardines, then grind the black pepper over them.

Top the sardines with the snipped chives, and dot each with hot sauce. Enjoy!
