There's an old wives' tale that eating eggplant parmesan can help induce labor. My friend Isabelle didn't know that when she e-mailed me a week and a half ago to tell me she'd had a funny feeling I was about to deliver my first baby, and that she also had another recipe to share for the Herbs & Spices website (I recently posted her Golden Beet Salad With Ginger and Garlic Scape Dressing recipe). She also didn't know that I was actually already in labor, feeling very finicky about food, and that her Garlic and Herb Roasted Eggplant was one of the only things that sounded enticing to me all day.
Though I planned to make her recipe for dinner, the prospect of going shopping for ingredients got less appealing as the day wore on, and I ended up going without a proper meal. That was probably a silly move -- my beautiful baby girl didn't arrive until Saturday night, and I can't help but wonder if she wasn't hanging out so long hoping I'd feed her some delicious herb roasted eggplant before she made her debut.
